Moderne Culinaire Academy Launches Partnership with Malaysia’s KDU and Berjaya Universities

One of the leading culinary schools in the Philippines, Moderne Culinare Academy specializes in helping its students understand the more technical and business side of the hospitality industry, all while encouraging their culinary talents.

This year, Moderne Culinaire Academy partnered with the prestigious KDU University College and Berjaya University College of Hospitality in Malaysia.

Those enrolled under MCA’s Higher Diploma in Culinary Arts and Kitchen Management program now have the option to go to Malaysia after their two-year certificate course and continue their studies further on either campus.

Upon completion of the additional two years, they will be rewarded with a Bachelor’s Degree in Culinary Arts Management. Should they wish to pursue a Master’s Degree, they only need to study for one more year.

HIGH LEVELS OF OPPORTUNITY

Students who undergo this program will certainly have an advantage when the time comes for them to start their careers. KDU University boasts of an impressive 96% employment rate for its students upon graduation in top-tier hotels and establishments. Similarly, the Berjaya University College of Hospitality will surely open doors for students since it is under the famed Berjaya Group, one of Malaysia’s largest conglomerates which operates various businesses such as F&B, resort management, gaming and casinos, and many others. MODERNE CULINAIRE ACADEMY’S BLOGGER EVENT

To celebrate the launch of their partnership programs, Moderne Culinaire Academy extended an invitation to me and other bloggers to a formal five-course meal.

We were all looking forward to the dinner, but before that, we were first briefed about the activities for the day inside one of their classrooms.

 

CUPCAKE-MAKING

Dessert comes first! Before we had our dinner, we first spent time with Chef Markus Elegino of Markus Patisserie Bistro (The Boy Who Bakes) for a lesson on making cupcakes. Chef Markus went to George Brown Culinary College of Canada for Culinary and Pastry Art Business Management, where he received the highest honor of Valedictorian. This got him into the Ecole Nationale Supierior de Patisserie in Lyon, France.

Chef Markus taught us a thing or two about making the perfect cupcake, and also showed us various ways of making the frosting, such as the usual swirl, the “rose swirl,” and the “stars.”

Because Moderne Culinaire Academy uses the hands-on approach of teaching, they encouraged us bloggers to try our hand at designing our cupcakes! We used two kinds of frostings: meringue buttercream and chocolate. They were both good, but the meringue buttercream was more exceptional for me. It was creamy and light, with the right amount of sweetness, and it had that “classy cupcake” taste.

I’m no baker, but thanks to Chef Markus who was there to guide us as we created the frosting, I managed to make a nice-looking cupcake! I might have put a little too much frosting though! Chef Markus commented “Wow! You do like your frosting!” Yes, I do!

 

FACILITIES

Before having dinner, we had a quick tour of the school and its facilities. The school is actually small, but the facilities are complete and modern, and everything the students need to achieve culinary mastery is readily available.

FIVE-COURSE DINNER

A five-course meal prepared by a culinary school? For sure, the food would be good! That’s what everyone was really looking forward to. When we finally went to the dining hall, we were all pleasantly surprised when we saw that the place was even set up with beautiful flowers, candles, and golden decors!

We even had free-flowing wine and champagne!

The dishes we had were all lovely, as expected, and they were all created with love and passion by the students of Moderne Culinaire Academy. Everything was really fine dining-quality. It was easy to tell that the talented students who made our food were trained well by the school.

SHORT COURSES

Moderne Culinaire also offers short courses in cooking and baking through their Global Cuisine Culinary Bootcamp and Baking and Pastry Bootcamp, which run for 4 Saturdays every month. This is perfect for busy people who can only devote a few weekends to learning about kitchen techniques, or those who simply want to learn how to whip up different cuisines or create pastries.

  9. One thing I want to do is to actually learn how to cook, however, that’s one thing I think I’ll never be good at. I think I’m best suited to be a taste tester. Lol. But yeah, this is a great step to take culinary a notch higher.. The competition is getting tighter as there are a lot of chef enthusiasts. But I think with this program, students will get a much higher opportunity as the learning level is also higher compared to the others.
